Big Ambitions for the Day

Well as most of you who know me know that I am not much of a cook and I really don't enjoy it much.  But for some reason over the last few weeks I have just had this burning desire to find healthy recipes that I can cook up ahead of time and freeze.  Since Keegan is now 1 year old and has the ok to eat all food but peanut butter I have wanted to cook.  I have been thinking alot about how innocent he is at this age and how easily he learns.  I want to prepare him for a healthy life style.  I am assuming he will learn to eat what I teach him and I want him to have lots of healthy food with fruits and veggies.  So my mission is to find healthy kid friendly recipes.  I haven't had a lot of time to look any up just yet but it is really on my mind.  This morning I woke up and decided to make Jenn Holyoak's homemade crepes for breakfast.  Yummy!! I found the recipe she left me a couple of years ago when she visited us.  Keegan loved them.  He ate a whole one with mashed up bananas and a little powder sugar on it.  I made up some extras so that we can freeze some and have them ready for anyday.  Because Matt and I both work full time my next goal for the day is to come up with dinners that can be frozen so on those days when we just get home from work and are dead tired we can just pop something in the oven. 
So my goal for today is to look up some freezer friendly, kid friendly healthy recipes.  Then make up a grocery list.  Go to the grocery store when Matt comes home with my car.  Then when Keegan goes down for his nap I plan on cooking my little heart out.  I am also going to bake up another batch of Amish Friendship Bread.  So good!!!
Matt is a little nervous and keeps asking me if I feel ok.  Usually the only time that I want to bake is if I am really upset or so bored that I can't stand it.  Rest assured I feel fine.  In fact I feel great. 
 
So far on my list for dinners:
Tator tot casserole with ground turkey and greenbeans, low sodium cream of mushroom soup.
Creamy chicken enchiladas with olives and brocolli (Don't really think these are that healthy but boy they sound good)
Sloppy Joe mix- again with ground turkey, celery, onion
Homemade Spaghetti sauce with lots of fresh veggies and some kind of Italian Sausage
Marinate fresh chicken breast in some Italian Herb mix and then stuff them with asparagus and provolone. Then freeze.
 
Now I need to think of some kid friendly meals.  Do any of you have some great recipes that you want to share with me.  I am looking form stuff that is healthy and that kids want to eat that include fruits and vegetables.
 
Well this is my ambitions for the day.  I will let you know if I get it done.  I am going to get cooking some tortillas so they are ready to roll when I make the enchiladas.  Let me know if you have any easy yummy recipes.

Dang girl, you are feeling soooo ambitious! Cookin it up all over the place. Did you make all those things in one day? I made those crepes for dinner last night and we had cream cheese & strawberries on them. They were so good and my kids love love love it when I cook breakfast for dinner! Happy cooking LOO!

Well I didn't get the spaghetti sauce done, and I still have the chicken marinating in the fridge. It just has to be stuffed and rolled and then frozen. I don't know what has gotten into me. Even I am surprising myself. The crepes were delicious. I am thinking about adding some orange zest in the next batch. Yummy!!! Thanks for the recipe. Love you guys, miss you.
